Made a vegan version of ricotta filled manicotti. Turned out amazing. Use vegan cheese. Was happy the cheese melted but it didn’t bubble up. So it kinda looked kind of plasticky. Pretty sure it is going to be challenging to find a vegan cheese I will enjoy.
